Chicken Casserole is Easy but Just Okay.

I think I've added a new dish to my arsenal--chicken casserole!

I made this yesterday and already have it separated out for the week.  I liked it, but I think it could use some tweaking.  Next time maybe I'll use LESS chicken.

Ingredients

2-3 boneless chicken breasts
1 can of cream of mushroom soup
1 box of seasoned stuffing
1 16oz sour cream
1 stick of butter

1. Boil the chicken in water for 25 minutes.  You can add in salt or whatever other seasonings you think will add some flavor.

2. Melt the butter in a large bowl.  Mix in the stuffing and allow the butter to soak in.

3. When the chicken is done cooking, allow it to cool a little bit and cut it into small bite-size pieces.  Make sure to trim and exclude the fatty stuff.  And by the way, who knew that it was so easy to boil chicken?

4. Mix the chicken, sour cream and mushroom soup.  Pour it into your baking dish.  

5. Place your buttered stuffing on top.

6. Bake at 350 for 30 minutes.  

And that's it.  I liked it for the most part, but didn't love it.  I liked the crunch of the stuffing,  but I think there was too much chicken. 

Easy Broccoli Casserole for Cooking Dummies

You really can't go too wrong with a casserole.  I love broccoli and I love cheese!  So here is an easy recipe for a broccoli casserole.

Ingredients

2 packages frozen broccoli
2-3 eggs
1 can of cream of mushroom soup
2 cups of shredded cheese
Cheese Nips or Cheez-its

1. Cook the broccoli as the package instructs.  It should be pretty simple, like throw it in a pot, boil and simmer. 

2. In a large bowl mix the can of mushroom soup, 1 1/2 cups of cheese and the eggs.  I like the "curdly" texture the eggs give the casserole--if you don't, then use just one egg, or even substitute a half cup of mayonnaise or sour cream instead. 

3. Pour the cooked broccoli into a 13x9 dish.  Actually it doesn't matter much the size as long as the broccoli covers the bottom in one layer.  

4. Pour the soup-cheese-egg mixture over the broccoli.

5. Sprinkle your remaining 1/2 cup cheese over the top. 

6.  Crumble some cheese crackers over the top. 

7. Bake at 350 until cheese is bubbling and slightly golden

I can get about 8 servings out of this. 

Introduction to I Can't Cook Jack

I recently decided once and for all that I must get my debt under control.  There are many things I want to do and I need to lift this weight and know financial freedom again.  You can check out my other blog for my debt reduction journey.

One of the things I decided to do to save some money is to eat out of my house.  I spend hundreds of dollars a year eating in the cafeteria at work and buying fast food. 

I can't cook.  The only things I know to make are scrambled eggs and a broccoli casserole.  I didn't learn to cook growing up and I've actually developed a fear of trying because when I've attempted recipes, I have wasted lots of money on food I end up having to throw away because of its inedible-ness (is that a word?).   But now I'm picking up the pots again in effort to save some money.  I even bought some plastic ware to fill and take to my job. 

In this blog I'll write out some recipes that I've tried and found easy enough for a cooking dunce like me to prepare.  Hopefully I can load some pictures and just share how things go with the meals I attempt.
