Easy Broccoli Casserole for Cooking Dummies

You really can't go too wrong with a casserole.  I love broccoli and I love cheese!  So here is an easy recipe for a broccoli casserole.

Ingredients

2 packages frozen broccoli
2-3 eggs
1 can of cream of mushroom soup
2 cups of shredded cheese
Cheese Nips or Cheez-its

1. Cook the broccoli as the package instructs.  It should be pretty simple, like throw it in a pot, boil and simmer. 

2. In a large bowl mix the can of mushroom soup, 1 1/2 cups of cheese and the eggs.  I like the "curdly" texture the eggs give the casserole--if you don't, then use just one egg, or even substitute a half cup of mayonnaise or sour cream instead. 

3. Pour the cooked broccoli into a 13x9 dish.  Actually it doesn't matter much the size as long as the broccoli covers the bottom in one layer.  

4. Pour the soup-cheese-egg mixture over the broccoli.

5. Sprinkle your remaining 1/2 cup cheese over the top. 

6.  Crumble some cheese crackers over the top. 

7. Bake at 350 until cheese is bubbling and slightly golden

I can get about 8 servings out of this.
